166. Rewind It

Sorry I didn’t get to posting last night. Chris and I had an at home dinner and a movie date. We watched Avatar which didn’t leave me much time for anything else. Avatar was cool, but I don’t think it lived up to the hype. Maybe this is because I waited so long to see it or maybe it’s because I didn’t see it in the theater or in 3-D, but I think they could have accomplished the same thing in half the time. The story was good, and I liked the message. However, it was also kind of predictable and generic. The visual effects were stellar (even on our “tiny” TV without the 3-D effects), but by hour two even those were getting old. 160-something minutes is just too damn long for a movie.

Eat It!

Since it was a dinner and a movie date, I made us a very fancy Italian dinner. I made a lightened up chicken parmesan: baked breaded chicken breast and spaghetti squash with Bertolli Organic marinara and a little bit of mozzarella cheese. There were two stars of this dish: the breading on the chicken and the pasta sauce.

I actually made the breading on the chicken myself. I toasted two pieces of TJ’s sprouted bread and tossed them in the blender with two cloves of garlic, and a few shakes of basil, oregano, and minced onion. I also threw in a pinch of ground nutmeg. It was delicious! I could have eaten just the breading!

The Bertolli Organic Olive Oil, Bail, and Garlic is a phenomenal sauce. I am not a huge fan of red sauce so I’m really picky about my sauces. They need to be exceptional for me to even bother. Needless to say, I was hesitant to even try the sample I was offered while wandering Sam’s Club a couple weekends ago. I decided to give it a try, and thank goodness I did. I immediately grabbed the three pack of jars. Seriously, try the sauce. You don’t be disappointed.

I had the rest of my mango for dessert. I think next time I get a mango I’m going to freeze it (or maybe just pick up some already frozen mango from Trader Joe’s) and toss it in the food processor with a bit of pineapple juice. Seems like it would make a pretty yummy sorbet.

My total calorie count for dinner and dessert was about 475. Not bad considering how much I ate!

Move It!

Yesterday was a 2 mile run or 30 minutes of cross training. Since I was pressed for time, I decided to take Maxwell on a extra long walk. Maxwell is a speed demon so we were cranking along at about a 13 minute/ mile pace. We also did a couple running intervals (Again, my dog is a speed demon; I can’t keep up with him for very long!). I didn’t wear my HRM, but the estimated calorie burn is 154.
