230. Slow Cooker Saturday: Basic Black Beans

I love black beans.  Seriously.  I could eat them every day.  I prefer to make them myself, but it’s kind of a hassle since you have to make sure they’re covered with liquid the entire time they cook.  Enter the slow cooker.

I made this batch of beans so that I could make some black bean soup (recipe coming next week) so I wanted them very basic with limited seasoning/ flavors.  You could obviously add veggies, more seasonings, etc. to serve as a side dish or something.

Ingredients
1 lb black beans
1 small onion, chopped
2 cloves garlic,crushed
2 bay leaves

Do It

  1. Soak beans at least 8 hours or overnight.
  2. Drain beans and place in 51/2 – 6 quart slow cooker.  Add onions, garlic, and bay leaves and enough water to cover.  Cover and cook on High until tender – about 8 hours.

You could you these in a variety of recipes – soups, enhiladas, tacos, refried beans…anything your little heart desires.
