June Foodie Penpals Reveal!

Hi friends!  I had some internet issues over the weekend thanks to storms so my Foodie PenPals reveal post didn’t get up on time!  As I mentioned on Friday when I announced my giveaway of a K@tastrophy Designs headband, I was pair this month with Krysty from Little Runner Girl.  In addition to the awesome headband, she sent me a bunch of delicious foodie goodies!

First up, this jerky.  Let’s just take a moment to discuss this jerky.  I am not a jerky person.  I don’t care for the taste.  I don’t really like the texture.  I’m just not a fan.  But this jerky?  This Turkey Perky Jerky is awesome!  It has a slightly differed texture than regular jerky (or at least I think it does) and an awesome peppery teriyaki flavor.  I will definitely be purchasing this jerky as soon as I find it in a store!


Along with the jerky were these Larabar uber bars in Bananas Foster and Roasted Nut Roll.  I love Larabars, and these were good, but a little too nutty for me.  I’m not a big fan of most nuts, and the Bananas Foster bard, while tasty, was a bit too walnutty for me.  Oddly, I prefered the Roasted Nut Roll bar.  (It was primarily almonds which is the one nut I really, really love.)

She sent me some popcorn and cinnamon toast seasoning from Target.  I actually bought this stuff for my boss this past Christmas as part of a beer and popcorn themed gift.  I just need to find a way to get the seasoning to stick to the popcorn without a boatload of butter or oil!

I thought I had taken a picture of the whole box all nicely staged, but I can’t seem to locate it!  Maybe I didn’t?  I don’t know.  Krysty also included some homemade brownies which  I may have eaten all three within 10 minutes of opening the box.  Ooops!

I actually won’t be participating in Foodie PenPals next month because I need to save some money to pay all the dental bills coming my way.  However, you can still join!  Check of the details below:

-On the 5th of the month, you will receive your penpal pairing via email. Contact your penpal as soon as possible to get their mailing address and any other information you might need like allergies, dietary restrictions, and/ or preferences. -Fill a box with $15 worth of fun foodie things, local food items or even homemade treats! The box must also include something written. This can be anything from a note explaining what’s in the box to a fun recipe. -Get your box in the mail no later than the 15th of the month. (Don’t forget about flat rate boxes when you go to ship your items!) -On the last day of the month, you post about the package you received from your penpal! -Foodie Penpals is open to bloggers and blog readers in the US & Canada. If you’re a reader and you get paired with a blogger, you will write a short guest post for your penpal to post on their blog about what you received.

276. Pineapple Mango Salsa

A while back I made Jessica’s Healthy Homemade Fish Sticks.  I liked the fish sticks so much that I decided to use them to make fish tacos a week later.  However, no fish taco is complete without a chunky, fruity salsa.  Enter my homemade Pineapple Mango Salsa.  This super chunky salsa was sweet and spicy and a perfect partner to the warm crunch fish sticks in their soft corn blanket.  It’s also great in salads or with chips. 

Pineapple Mango Salsa

Makes about 12 ¼ c.servings

½ Pineapple
1 mango
6 – 8 pearl tomatoes (*see note)
½ medium red onion

juice of half a lime
Cilantro (dried or fresh)
hot sauce of choice

*Note: I’m currently trying to learn to like tomatoes, so this particular recipe is a little light on the tomato.  If you’re a big tomato fan, I’d suggest using a few more.

 Do It

  1. Roughly chop pineapple, mango, and tomato.  Dice red onion. Put everything into a re-sealable container or a bowl with a lid.
  2. Add lime juice, hot sauce, and cilantro to taste.
  3. Seal container and shake to combine
  4. Enjoy with chips, on a salad, in taco, straight out of the Tupperware…however you like it!
P.S. When scheduling posts in advance, it’s important to enter the correct date of the day you’d like your post to go up.  Yesterday was the 16th, not the 19th which explains my confusion as to why this didn’t get posted yesterday as promised.
